Homemade Chai Tea

Description

Warm, comforting, anti-viral tea that my mother learned at the feet of Yogi Bhajan in 1970.

Ingredients

  • 3 qt water
  • 1 tbsp fresh grated ginger
  • 1 tsp black peppercorns
  • 5 cardamom pods, broken open
  • 1 sticks cinnamon
  • 1 t whole cloves

Instructions

Place all ingredients into a 4 quart pot, cover and simmer on low for at least an hour. Try not to let it boil. You may dip into it as early as 20 minutes, but the longer it simmers the better.

Excellent when done in the crock pot, too.

To make with black tea, turn off burner and add a bag or two of good quality darjeeling tea, let steep for 10 minutes or to taste and remove bag.

Ladle the tea into a big mug (through a strainer if need be), add honey, milk (optional), and sip slowly.

Notes

Wards off colds, I'm tellin' you. Mom making this for us at night is one of my earliest memories. Major comfort food.

Love Tea

I love tea and have been trying out all sorts of recipes lately. Some have worked better than others. I will certainly need to give this recipe a try as I could do with something that's anti-viral at the moment.

It tastes different than the chai tea available commercially, either the Oregon Chai or the tea bags from Good Earth or The Republic of Tea. But I kind of like this kind best. Could be because I was raised with it, could be because I made it myself, or could be that it's less processed. It's really great in a thermos to sip on when you're fighting off a cold, too. The ginger makes it "thermogenic" in that it warms you up from the inside. In the summer, I drink less, but I like it cold.
