Description

This recipe from TNH reader BetsyK is sort of like a poor man's pasta e fagioli (pasta fazool).

Ingredients

dried pinto beans
1  
crushed tomatoes ((28 oz))
1  
medium onion (chopped)
1⁄2  
green bell pepper (chopped)
1  
garlic (minced (add more if you like))
6  
water
1⁄4  
parmesan or romano cheese (shredded)
1  
mozzarella cheese (shredded)
   
Salt and pepper (to taste)

Instructions

Rinse and pick through the beans. Soak overnight. Discard soaking water and place beans in crockpot, covering with 6 c. water. Cook on high for 2-3 hours or until the beans are al dente (they're going to be quite al dente). You can add half of an apple or potato to the beans to make them less "gassy." Save 2 cups of the "bean water."

Combine all ingredients (except for the cheese) and cook in crockpot for 10-12 hours on low or 5-6 hours on high or until beans are soft. Add cheeses and remove cover; cook on high for 15-20 minutes. Stir a few times. This is yummy with some good crusty bread.

Other tips for reducing "gassiness" of beans are adding some vinegar during cooking. I don't know if either of those things work, but adding apple or vinegar during the first cooking stage works for me. Enjoy!
